The future of food will be increasingly driven by alt-protein, according to the President of the China Plant-based Foods Association, who in his keynote outlined the sustainability, health and business opportunities behind this global shift.
Larry Lee’s presentation at Pulses 26 underscored the growing shift from animal-based to plant-based protein consumption, which he described as a long-term global trend driven by environmental, health and food security concerns. He argued that rising population growth, resource constraints and climate commitments are increasing the need for more sustainable protein sources, positioning pulses and other plant-based foods at the center of future food systems.
Lee also highlighted the commercial opportunities associated with this transition, including expanding demand for plant-based foods, alternative proteins, fermentation technologies and functional nutrition products. He pointed to China and the wider Asia-Pacific region as key growth markets, while emphasizing the role of younger consumers, sustainability initiatives and food innovation in driving the sector’s future development.
